    Roasted Red Pepper Dip Crudités

    Summer nights call for light appetizers and dining al fresco! If you follow us on social media, you saw last night that I have to make appetizers to lure Daniel to quit working at the end of the day! How does the old saying go... "The way to a man's heart is through his stomach..."  

    When Daniel and I got engaged I wanted to feed him well and work with his dietary limitations on sugar and grain. (If you don't know Daniel's personal story of what led him into a career in health and fitness, I'll make sure he posts on that later!) This is what motivated me further into grain-free cooking and baking. Making delicious and nutritious food for others is definitely my love language! So much so, our anniversary is this weekend, and everything I've planned so far involves food. Ha! Good thing we have Guiltless Superfood 7 Seed Flour to make delicious and super nutrient sweet treats!

    Ok, now back to summer nights and light apps... veggies and dip are one of the easiest and most appealing healthy appetizers there is. With all of the fresh, bright colors of the produce, even the healthiest of eaters know that they can eat clean when they see an appetizer loaded with veggies. The question then becomes, what's in the dip? This Roasted Red Pepper Dip is Phase 2 (for Doug Kaufmann's anti-fungal diet) because of the greek yogurt and cream cheese. If you don't do dairy, you could replace the yogurt and cream cheese with "Greek Style" dairy-free plain yogurt made from coconut milk. Here is a good brand I like. Then it would be Phase 1. This recipe is loaded with yummy fungal-fighters like peppers, onions, garlic, and walnuts.

    There's another saying that goes, "Everything you eat either feeds disease or fights it." We are so thankful to have been blessed with the idea for Guiltless Superfoods that FIGHTS diseases, is immune boosting and provides great gut health.     You can serve this dip immediately, or you can make it a day ahead of time (stored in an airtight container in the fridge) to let the flavors meld even more overnight, then serve chilled.

    The toasted walnuts, sautéed onion and garlic give this dip a flavorful and nutty base, paired perfectly with the sweetness of the red peppers, and the creaminess of the yogurt and cream cheese. Serve with your favorite rainbow of veggies. 

     

    Ingredients:

    2 tbs extra virgin olive oil

    1/4 cup red onion, chopped

    3-4 large garlic cloves, minced

    1/2 cup walnuts, chopped

    12 oz jar roasted red peppers, drained

    1 tbs dijon mustard

    1 cup greek yogurt

    1 (8 oz) package cream cheese

    1/4 tsp sea salt

    pinch black pepper

    1/2 lemon, freshly squeezed juice

     

    Directions:

    1. In a small to medium skillet on medium heat, add olive oil heat until warm and coats the pan. Add chopped onions to pan, cook a few minutes until soft, slightly brown and fragrant. Add in diced garlic, cook about a minute more. Then add chopped walnuts and toast for one to two minutes, stirring frequently, until browned and fragrant. 
    2. Add onion and walnut mixture pouring everything in the pan into a Vitamix, blender or food processor. Add in roasted red peppers, dijon mustard, yogurt, cream cheese, sea salt and pepper, and squeeze in lemon juice, blend on medium speed until completely combined and smooth. 

     

     

    Serve with veggies.

    When it comes to a sweetener, we think raw, natural honey is pretty close to being the bee's knees! Not only is it naturally sweet and delicious, but it's also anti-fungal, antibacterial and paleo.

    When honey is consumed with moderation, it reaps several health benefits:

    -Helps with allergies: It has anti-inflammatory effects, can soothe coughs and is known to reduce seasonal allergy symptoms. 

    -Provides quick energy: As a natural unprocessed sugar, being a combination of glucose and fructose, it can help give a quick boost to longer endurance exercises. 

    -Memory Booster: honey contains antioxidants that may help reduce cellular damage in the brain as we age. One study noted that consuming about 20 grams of honey per day can help provide a better short-term memory as we get older. 

    -Treats dandruff: Honey's antibacterial and antifungal properties can help heal seborrheic dermatitis and dandruff, which are often times caused by an overgrowth of fungus. 

     

    Now for the taste, honey is sweeter than sugar and offers a whole lot more nutritional benefit! Making it a fine choice for a sugar substitute in baking, or really anywhere where you might use sugar. 

     

    And how much should you use? Well, honey can be substituted for sugar in equal amounts up to one cup. One cup honey for one cup of sugar. But since honey is sweeter than sugar, when a recipe calls for more than one cup, use just 2/3 or 3/4 cup of honey more for anything over one cup.

    Turkey Bacon Wrapped Stuffed Jalapenos

    Hey guys! Did you catch the recipe for our gluten-free, grain-free and low-carb Turkey Bacon Wrapped Stuffed Jalapeños on Know the Cause hosted by Doug Kaufmann?!

    Ingredients:
    10 whole fresh Jalapeños (2 to 3 inches in size)
    1 8oz. package Cream Cheese (softened)
    Garlic Powder (to taste)
    Cajun Seasoning (to taste)
    10 slices Turkey Bacon (cut in half)

    Instructions:
    Preheat oven to 375 degrees.

    You may want to consider wearing latex gloves when preparing the jalapeño peppers.

    Cut stems from jalapeños. Cut jalapeños in half, length-wise. Remove seeds and membranes with a spoon.

    In a bowl, mix Cream Cheese with Garlic Powder.

    Spread cream cheese mixture into each jalapeño half and then wrap with a half piece of Turkey Bacon. Lightly push the turkey bacon into the cream cheese to help hold in place.

    Line a baking sheet with foil and place the peppers on the baking sheet. Sprinkle with Cajun Seasoning.

    Bake for 20 to 25 minutes or until bacon is cooked. Turn on the broiler for a few minutes if you want to crisp them further.

    Guiltless Dessert - Apple Pie Roll-Up

    Guiltless Tortillas are great for desserts! Guiltless Apple Pie Roll-Up recipe from today's show on Know the Cause hosted by Doug Kaufmann! ? Love this idea for a healthy dessert and all of the fall flavors of apples, cinnamon, vanilla, walnuts/pecans with a coconut oil and butter sauce wrapped up in a toasted Guiltless Tortilla!
    Makes 3-4 Servings

    Ingredients:
    1/2 Tsp Cinnamon
    2-3 Tbsp Honey (Substitute Stevia for Phase One)
    1 Tbsp Butter
    2 Tbsp Coconut Oil
    2-3 Green Apples Sliced (With or without skin)
    1/2 Tsp Vanilla Extract
    Walnuts/Pecans (Optional)
    Guiltless Tortillas
    Preparation:
    Place coconut oil and butter into a hot pan, then add your sliced apples, Cinnamon and honey.
    Cook the apples until they reach the desired tenderness. Place the apple mixture on a guiltless tortilla and top with walnuts or pecans! Roll up or eat with knife and fork like a crepe! #YUM!
